And because it’s Friday – here’s a tiny glimpse of the yummies in Imbolc, this’ll tempt your tastebuds!
Potato Soup
Ingredients:
1 package “Farmer’s” Sausage, approx. 2 lbs (ham works as well)
4 quarts water
2 quarts buttermilk
4 cups diced potatoes
2 cups diced onion
2 tbsp dill weed
salt & pepper to taste
Directions:
Cut sausage into four equal pieces. In a large soup pot, bring water, dill and sausage to a boil. Add potatoes, onions, salt and pepper to taste. When the potatoes have cooked, remove the sausage, reserving one piece for the soup; use the rest for Sausage & Roots Bake below. Slice the piece for the soup in half lengthwise, then in small slices.
Drain about three to four cups of water, then mash the potatoes still in the stock. Return the meat to the pot, and bring to a boil. Slowly add the buttermilk while stirring constantly. Serve hot.
